Kokuto is a traditional unrefined black sugar from Okinawa, Japan. It has a deep caramel flavour, distinctive mineral character, and more complexity than ordinary brown sugar.

More than just sweetness, kokuto adds richness, warmth, and depth without overpowering the natural flavours of food and drinks. Its earthy, caramel-like notes complement the umami of matcha and bring a rounded balance to hojicha, coffee, and desserts.

Enjoy a small piece on its own as a traditional Japanese treat, or dissolve it into your favourite beverage.

Taste Profile

Rich, deep caramel-like sweetness with earthy notes and a subtle molasses character. Traditionally made from sugar cane, Okinawan kokuto retains naturally occurring minerals, giving it a distinctive, complex flavour that adds warmth and depth to matcha, hojicha, and other beverages.

Preparation

For one drink, use approximately 5 g of kokuto (¼ of a 20 g pouch).

Break or crush the kokuto into smaller pieces and dissolve completely in a small amount of hot water. Stir into your matcha or hojicha, or add to milk, coffee, or other beverages.

For iced drinks, dissolve the kokuto in hot water before combining it with cold ingredients.

Servings: Approximately 4 per pouch.
